Baked Egg Dish (Low Carb)



I love eggs.  So thus I must post another egg recipe that I have had on heavy rotation lately.  It is low-carb of course but might be my new favorite way to eat eggs.  What is so great about this is that it is super simple and adaptable to your tastes depending on what ingredients you add and how long you cook the eggs.  I am personally a fan of an egg with a crispy edge so I like mine well done.  This recipe is for one large serving as I typically eat twice a day and this makes up both my breakfast and lunch.

Baked Egg Dish

Ingredients:

  • 2 Tbs real butter, slightly melted and used to grease the dish... yes, this is a lot of butter, yes it makes the dish
  • 4 large eggs
  • 2 Tbs chopped green chilies
  • 2 Tbs chopped bacon (or any other meat you like)
  • 2 Tbs. crumbled goat cheese 
  • Salt & Pepper to Taste

Directions:

Preheat oven to 400 degrees. In a small casserole dish, grease the bottom and up the sides of the dish.  Let the extra butter pool at the bottom of the dish.  Break open the four eggs.  Sprinkle the remaining ingredients across the top. Place in the oven 10-15 minutes depending on how done your like your eggs.  I go for the whole 15 to get a good crisp on the eggs.  Remove from oven and let cool.  These eggs are super hot and will burn your mouth like no other if you aren't patient.  Enjoy.

Keto - Low Carb Croque Madame




A year ago this week, we were staying in Paris. I've been missing Paris quite a bit and already plotting when I can return. One thing I miss quite a bit are croque monsieur and croque madames, These are essentially toasted open face ham and cheese sandwiches (topped with an egg makes it a madame), Unfortunately, these are not the lowest carb foods. At least they weren't until I figured out to make them low carb.  I had a couple of ideas in mind and will probably give each a try but the key to this croque madame is a lower carb bread that I recently discovered, Sara Lee Delightful with a net 13 carbs for 2 slices.  My quick instructions to assemble below.



Low Carb Croque Madame 

2 slices of Sara Lee Delightful bread
1 Tbs. butter melted
2 slices Gruyere cheese
2 slices of nice ham (I used Boar's Head)
2 eggs, prepared over easy


I buttered 2 slices of bread on one side and placed them on a baking sheet, butter side down for 4 min. Once the bread had started to toast I pulled out and topped with ham and cheese.  I put the slices back in the oven under broil until the cheese was nice and bubbly.  Once done, I topped each slice with an over easy egg.

Perfection.

Keto-friendly Supplements by Mansports




I've recently started taking some supplements to help with burning fat and insuring that I am getting enough water each day. I have come across a brand, Mansports,  which is keto-friendly and has great products that I have started using throughout the day. Since I get a keto-audience on this blog, I thought it might be valuable to those readers. 

**I have no relationship with Mansports other than the purchases I have made with my own money.

Mansports products are made with zero or at max, a low sugar content.  All the products I have been using are zero sugar and have not negatively impacted me staying in ketosis in any way.  I have not tried all the products available but have three great products so far that have become part of my normal routine.


  • Mansports Iso-Amino.  You add a scoop of this to a tall glass of ice water and it has a similar effect as adding Crystal Light to your water but the flavors are over the top good, just like candy.  So far I have tried grape bubble gum which legit tastes like grape gum and Rainbow sherbet which I think tastes most like Fruity Pebble Cereal which I still really enjoy.  Both help me drink a ton more water and stay hydrated which is also helping with my weight loss.  Other flavors that they have and that I am anxious to try are: Pineapple Express, Fruit Smash, Dorks (Nerds-candy flavor), Green Apple and so many other flavors.



  • Mansports L-Carnitine.  L-Carnitine is a fat burning booster. I keep this in my refrigerator and take a shot each morning to help me burn more fat throughout the day.  L-Carnitine comes in Lemon Drop, Rainbow Sherbet, Blue Razz, and Mango.




  • Mansports Iso-Protein.  Proteins are heavily used by the keto community because they can be used to replace flours in baked goods such as cakes and cookies.  Mansports has an array of awesome flavors which can be mixed as a shake or are great to use in keto-baking.  I recently tried using the Confetti Cake Protein to make pancakes and they are my favorite yet.  So good.  Other flavors of protein available are Sprinkled Donut, Loopy Fruit (Fruit Loops), Blueberry Muffin, Peanut Butter Bits, and the list goes on....


Since buying these supplements, I have noticed a couple of things:


  • I am losing weight again.  Although I have been back on keto since January my loss has been a lot slower than the past.  Once I incorporated these products in, I have started seeing results faster.


  • My sweet tooth is gone.  I am not craving sugary-flavored things because my body thinks it is getting this because of the candy and baked good flavors.  


You can buy Mansports products on their website and they frequently run specials like 20-30% off.  This is good because some items can be pricey.  Amazon also has a selection of Mansports products but you won't find the variety offered on their website.

KETO (Low Carb) Cheese French Souffle



Despite the temptation, I have managed to stay strict to Keto the entire month of January. Getting back on the wagon has been tougher this go around following the splurge of the holidays and traveling, it has felt like learning good behaviors all over again.  Last night I was grouchy because I couldn't eat all the things that I was craving and I was so tired of the foods I routinely eat.  I hadn't been to the grocery store as I was supposed to be in Minneapolis this last week but plane mechanical issues and a blizzard that crossed the Midwest kept me in Wichita.  Needless to say, I felt inspired to be creative with what I had on hand and my love of french food.  I had heard that a souffle could be made low-carb but had never attempted it on my own.  I'm actually really happy with the results and am definitely adding to my repertoire.  And of course contemplating why I haven't been making souffles for years?  Next time I'll have to give a chocolate souffle a try.

KETO (Low-Carb) Cheese French Souffle

Ingredients:
2 Tbs. real butter (I use Kerrygold)
2 Tbs. Almond Flour
1 Tsp. Nutmeg.
1 C. Heavy Whipping Cream
4 eggs, separated
3/4 C. Grated nice cheese of your choosing (Gruyere, Parmesan, Vermont cheddar, etc.)


Directions:

Preheat oven to 375 degrees. In a skillet heat butter till melted.  Add 1 Tbs. Almond Flour and mix with butter.  Lower heat and add heavy whipping cream.  Mix together and then add the other tbs. of almond flour and nutmeg allowing to slightly thicken.  Remove from heat.  In a medium size bowl mix together egg yolks and cheese.  Add grated cheese.   In another mixing bowl using a hand mixer, mix the egg whites with electric mixer until egg whites form stiff peaks.  Add the skillet mixture once mostly cooled into the yolk mixture and mix together.  Next fold in the egg whites.  Be careful not to over mix causing the the egg white mixture to loose it's airiness.  Place the mixture in ramekins (3) or a medium size round souffle dish.  Bake for 25 minutes at 375 degrees.  Do not open the oven for the first 20 minutes or it will cause the souffle to fall.

Souffles will rise quite a bit above the top of the ramekin or dish.  This is expected.  Mine were quite a bit higher but then fell a bit after cooling on the counter.

Low Carb Southern Tomato Pie



After returning from Savannah, I have been craving southern foods moreso than normal.  I started looking up recipes and came across a recipe for Low Carb Tomato Pie and let me tell you, it doesn't disappoint!

Low Carb Southern Tomato Pie

Crust:
3/4 C Almond Flour
1/3 C Oat Fiber or 2 Tbs of Coconut Flour
1 C Shredded Parmesan
1 Egg
2 Tbs Butter

Mix ingredients and press into 9" pie plate.  Bake on 350 for 15 minutes.

Filling:
4 large tomatoes, sliced
1 C Shredded Cheese of your choice, I used Colby Jack
1/2 C Mayo (the real stuff)
1/4 C Chopped Bacon
Italian Seasoning

After the crust is done lay sliced tomatoes on crust.  Sprinkle tomatoes with chopped bacon.  Mix mayo and shredded cheese together in a separate bowl.  Slather the top of the pie with the mayo mixture to evenly distribute. Sprinkle top with Italian seasoning.

Bake at 350 for 45 minutes.  Serve warm or chilled.

Faux Loaded Potatoes


I am back with another low carb, keto-friendly dish that I tried out this last weekend.

Cauliflower is great substitute for mashed potatoes but doesn't do it when it comes to boiled or fried potatoes. I had been hearing that radishes are a good substitute but I have never liked radishes.  They have always tasted far too bitter and peppery for me.  Apparently if you boil radishes, they lose a lot of the strong flavor and become much mild.  I was skeptical but I still wanted to try.

Rinse radishes and remove the ends.  Slice into bite size pieces.



These look like new potatoes already.

Boil radishes for about 10 minutes on medium heat.


The water will turn a bit purple, that's ok.

Drain radishes and try to dry the radishes as best you can.



Add radishes to heated skillet with the oil of your choice. I salt and peppered my radishes as they cooked.

Fry radishes until browned.



Once complete, prep your faux fried potatoes to your preference.

Mine are topped with cheddar cheese, crumbled bacon, and ranch dip.  The radish has a slicker texture than a potato but the flavor becomes very mild.

This was definitely one of the more decadent things that I have made keto-friendly but I wasn't disappointed.  I can now say I am a former radish-hater as these were really tasty.

Keto Meal: Hatch Chile Pork



This weekend the Midwest was hit with a cold front which dipped our highs into the 70's creating all the feelings of fall in my household.  I love to make crockpot meals in the fall and winter and while at the grocery store this weekend, I decided to make some Hatch Green Chile Pork in the crockpot when I came across a new kit I had never seen before by Stubbs. The kit is actually for chicken but the husband and I prefer our green chile with pork so we swapped the meats.  The kit comes with a dry rub, a cooking sauce, and a finishing sauce. You can use it to cook on the stovetop or in the crockpot but we opted for the crockpot method.  We cooked our pork roast about 7 hours and it was very tender to shred.  It would be great to serve the meat on sandwiches or a salad but we opted for soft tacos.  Using Mission Low Carb Tortillas, I stuffed mine with pork, pepper jack cheese, sour cream, and salsa.  If I had some avocado, I definitely would have made some guac to go along with it.  The flavor was excellent.  We were a little worried because our roast was bigger than what the seasoning kit called for but no worries, very well flavored and even had a little heat.  We noticed there were a few other flavor kits that we may have to check out next time.

One Year Keto Anniversary - Progress in Pictures


This last week, I celebrated my one year anniversary on Keto. I have managed to lose 88 pounds in one year.  I can't believe I have stuck with it this long.  It has been a far easier journey than I ever thought it could be and I wouldn't change this last year for anything.  I am now far healthier and happier than I have been in a long time.  I have a bit still to go but even if I don't lose another pound, I am still so thankful for the progress I have made. 

Something that I think a lot of people struggle with when starting a diet like this when they have so far to go is just how daunting it feels to lose 50 - 100 - 150 pounds.  I think what people fail to realize is how much of a difference even 10 pounds makes.  I remember just starting last year and noticing within two weeks that I was already feeling better.  I hadn't lost much in those two weeks but I wasn't so sluggish or sleepy; my energy was way up.  I attribute a lot of gaining my life back to this lifestyle. I am far more active and want to get out and do things. I even attribute my desires to start side businesses and having success to it because I'm not tired all the time.  I now know a way that I can live and not be so dependent on sugars and carbs and that is a really freeing feeling.

I thought I would share some progress pics over the last year to show how far I have come. These early pics aren't so easy to share but this is real life.

So what's next?  I'm going to continue to live a ketogenic lifestyle and continue to benefit from the weight loss. I'd like to lose another 40 pounds or so.  I actually revised my goal weight after I figured out how achievable it was and realizing how much better I feel. 
 
 A few things have changed in the last couple of months --
 
I have stopped tracking every thing I eat in MyFitnessPal.  I loved this app when I first started but as I got better at knowing how many carbs I was eating, I found it was tedious to keep tracking it.  I do recommend using an app to track if you are new to keto or any low-carb diet. 
 
I've allowed myself to be more lax with my carbs.  Now I'm not talking going crazy but I sometimes go over 20 net carbs a day and I'm ok with that. 
 
I've allowed myself to "cheat" when I plan for it. So far this has only been on vacation which is fine with me.  I don't need to "cheat" once a week, or month, or year.  All in moderation, if I want something bad enough, I can figure out a way to have it ... low-carb.

Strawberries

 
 

I am loving strawberries right now.  Especially strawberries that adorn my low-carb cream cheese pancakes.

Cream Cheese Pancakes
2 eggs
2 oz cream cheese
1 tsp. sugar substitute
1/2 tsp. cinnamon
1/4 tsp. baking powder
Coconut Oil spray or Kerry Gold butter for the griddle

Heat griddle and prep with coconut oil or butter.  In blender mix first 5 ingredients until well blended.
Pour batter on griddle and cook approximately 2 min per side until done.

Strawberry Topping
1/2 C. Strawberries, sliced
2 Tbs. sugar substitute

Combine strawberries and sugar-substitute and let sit overnight in the fridge.

Serve on top of pancakes with Cool Whip if desired.

11-Month Keto Weightloss Update

It was 11 months ago that I started my weight loss journey and started leading a Ketogenic lifestyle.  My hope was that I would be down 100 pounds by the time I hit my one year anniversary... assuming that I stuck with it.  Sticking with a diet was something I just never was able to do until Keto came into my life. The most I had lost at any true attempt was 30 pounds. I distinctly remember how I felt 11 months ago -- emotionally stronger but disappointed in my body. I was worried that I wouldn't be able to do the things in life that I wanted to do like travel and keep up. I was constantly sleepy, walked slowly, and didn't feel good a lot of the time.  My blood pressure was high, my blood sugar was high, and I was on a fast track to a significant health event. Never mind the day to day aches, exhaustion, and moodiness.

As I am closing in on my one year anniversary,  I wanted to share my progress update. I believe the last update I provided here was a weight loss of 67 pounds.  I am now 86 pounds down and 14 pounds away from my one year goal.  At this point, it doesn't matter if I don't make 100 pounds in a year... I am just so dang proud of myself for making it this far.  I am now at the back of my closet - I can fit into all my old clothes (some of which are even now too big on me).  I can put on clothing that was I was wearing a year ago and have one of those moments where you hold the fabric away to see the gap. (I haven't made it into standing in one pant leg though!)  I will provide a one year update on the anniversary but until then I will continue to Keto on.

Keto-Friendly, Sugar-Free, Diabetic-Friendly, Low Carb ButterBeer Recipe

Our recent trip to The Wizarding World of Harry Potter has left me with a hankering for Butterbeer.  Now let me be clear, I already loved all things cream soda and butterscotch so it wasn't a hard sell.  Once I returned from our trip and jumped back onto Keto I thought to myself, "surely I could create a Keto-Friendly version of Butterbeer so I can continue to enjoy it while on keto."  I had to seek out a couple of ingredients but all were easily found at my local grocery store.




Keto-Friendly Butterbeer Recipe
Makes 1 Serving

Ingredients:
1 Can Diet A&W Cream Soda Chilled
1/4 C Heavy Whipping Cream
2-3 Sugar-Free Werther's Originals (the smaller ones)
1 Tsp. Butter (the real stuff)
1 Tsp. Sukrin Gold (great low carb alternative to brown sugar and is optional in this recipe)
1/2 C Ice Cubes


To make the Butterbeer froth, in a saucepan, melt butter and sukrin over low heat. Add heavy whipping cream and Werther's Original candy. Stir over low heat until candy has melted into mixture. Remove from heat.



In a blender (I just upgraded to a Ninja Blender and I love it!) add Cream Soda and Ice. Blend until nice and smooth and pour into glass. Careful removing the lid because there will be some pressure from the carbonation.  Pour froth mix over the top of cream soda.



Enjoy!

Vacation from Keto: Butterbeer and Lard Lad Donuts!



Several months ago, I decided that I would go "off" keto for a week while we were in Orlando, Florida on a family trip for a week.  There were several reasons why I made the decision, 1) I knew it would cause me stress to figure out food while there, especially in the parks which would make me as well as my family miserable 2) I knew I would be tempted more than usual to eat carbs namely sugar 3) There were things I have been wanting to try for quite awhile that I didn't want to deprive myself of and 4) I have worked really hard the last 10 months and needed to know that I could fall off and get right back on.  That second part started the next day following our little trip, right back onto Keto. 

I thought I would share a little bit about what it was like going off physically, mentally, and such now that we have returned.

A couple of days leading up to the trip, I started to waiver on my decision to go off keto.  I started to think I should just stick to it.  Sticking to it hadn't failed me so far so why risk it?  I also started to feel like maybe it just wasn't the right decision for me right now. 

Those feelings started to fade as we arrived in St. Louis to meet our flight connection to Orlando.  Initially, I was really fearful to eat something.  I almost felt guilty like I was being "bad."  It eased up as time went on.  We ate out every meal while we were gone so I had plenty of opportunity to eat things I had been craving or so I thought.  What was strange to me was some of the choices I ended up making.  First, I wanted nothing, I mean absolutely nothing to do with a potato.  Fries? Nope.  Mashed?  Nada. Baked?  No way.  I have mentally equated potatoes as evil (as I have determined they are one of the main causes of obesity in society today) so I just had no desire.  It may all be in my head but that's fine.  I'm not eating potatoes.  I did eat Yuca though and it was excellent.

I found that I really missed fruit.  And previously, I didn't eat a whole lot of fruit. I found myself looking for veggies and fruits as alternative sides to potatoes...  I ate bread and rice quite a bit. I had a Curry dish at Bahama Breeze that had a pineapple salsa on it, it was really really good.  In the past, that's not the first thing I would have gravitated to but I guess my tastes have changed. 

Foods made with real sugar are really sweet. Like I am not sure how I used to eat such sweet things regularly.  There were two things I knew going into the trip I wanted to indulge in, both at Universal Studios.  First was a large Homer Simpson Donut that was big enough to share between the girls and I. I'll admit, it was an excellent donut.  Second was Butterbeer.  Butterbeer was probably the best thing I had on the trip... and I had it twice.  I may not be much of a Harry Potter fan (no worries, the husband and children are so we're good in this household) but I have heard so much about the stuff, well I had to try it for myself.  The best I can describe Butterbeer as is a sweet cream soda that has been topped off with a melted ice cream that tastes like Werther's Originals.  I had the regular version and then I had it frozen.  It is nice either way and I totally see why people go nuts for the stuff.  I believe I can make a keto-friendly version so look for that coming soon!



The bread and rice didn't impact me much as far as how I felt but after eating or drinking something sugary, I definitely felt jittery. And I usually regretted eating or drinking as much as I did. 

Some other things I noticed was that my body felt more bloated.  Not like I was retaining fluid but just more "full." in general.  I ate more but I was also hungrier.  I did do a good amount of walking but I am sure that carbs were causing me to crave eating more.  Nothing other than the Butterbeer was excellent or hit the spot.  It was just food in the end.  And I guess that was reassuring to know that food didn't have a hold on me.  Sure I ate some bad stuff but I could easily have said no and been fine. In fact, after a couple of days, I started thinking I should just jump back on keto because nothing is as good as I thought it would be...

All in all, the vacation from keto has helped to confirm for me that I truly have made a lifestyle change.  I am planning another trip in a couple of months and am considering what I will do then.

On the upside, I did reap the benefits of my weight loss on the trip -- I was able to walk around fine. Sure my feet hurt at the end of the day just like everyone else's.  I had no swelling in my feet or legs.  It was hot but I wasn't a sweaty mess at the end of each day. And I didn't complain the entire time from being uncomfortable or irritable.  All of those reasons is why it is absolutely worth it to me.

Keto (Low-Carb) Biscuits



One of my pantry staples for living a ketogenic lifestyle is Carbquik.  Carbquik is a low-carb version of the popular baking mix, Bisquik. I buy my Carbquik on Amazon for about $13 for a 3 lb. box which lasts quite awhile since I am the only one in the house who eats it. I typically use Carbquik for waffles or pancakes (with sugar free syrup) but lately I have been craving biscuits. My husband whipped up some Carbquik biscuits for me to go with our dinner of baked pork chops and french style green beans last Sunday evening. And yes, he is just that great of a guy to make dinner and make something that I can eat too. The biscuits turned out pretty good.  They definitely are comparable to a Bisquik drop biscuit. They have some flakiness to them and crumble about the same. I think they would be great with sugar-free jelly or jam or to use in a breakfast sandwich with sausage and egg. They could also be modified to use as a shortcake for Strawberry Shortcake.  I might have to try that next.

Keto Recipe: Baked Artichoke Heart Casserole



I didn't always love artichokes.  It was some time around the "spinach and artichoke dip" craze of the late nineties that I realized that I actually did like artichokes.  Now I'll eat them on just about anything... salad, pizza, sandwich. 

Earlier this week I was looking for some new sides to have with my meals that would be keto-friendy.  I saw that artichokes were relatively low in carbs so thought it might be good to make some sort of casserole out of them.  Since I am on the only one in my household who eats keto or would eat an artichoke for that manner, I just made small ramekin size servings.  I didn't find a recipe, I just kind of made it up as I went along and overall not too bad.

Single Serving Baked Artichoke Heart Casserole

Ingredients:
1 can of artichoke hearts
2 Tbs. Real Mayo
2 Tbs. Parmesan Cheese + additional to sprinkle on the top
1 tsp. Garlic Salt
Pepper to taste

Directions:
Open artichokes and drain well.  Put artichokes in bowl and use fork to mush them up a bit.  Add remaining ingredients and mix well.  Put in individual servings or one small casserole dish.  Sprinkle with additional Parmesan Cheese.  Bake at 400 degrees for 8 minutes.  Turn on the broiler and let broil until top is crisped to your liking.

My Birthday Cake - A Low-Carb Keto Cheesecake




I was dead set on sticking to my keto diet this birthday so coming up with a birthday cake was going to be a challenge.  Lucky for me, I like cheesecake and it can easily be made keto-style or low-carb.  My husband took it upon himself to make the cheesecake for me and he did an excellent job. I like the Cheesecake Factory's Low-Carb Cheesecake and this tops that, seriously.

Low-Carb Keto Friendly Cheesecake

Ingredients:
  • 3 packages (1 and 1/2 lbs) full-fat cream cheese (room temperature)
  • 4 eggs (preferably room temperature)
  • 1 and 1/2 teaspoon (1/2 Tablespoon) vanilla
  • 1 and 2/3 cups sugar equivalent of artificial sweetener, we used baking stevia
  • 1/4 cup sour cream
  • 1 cup almond flour
  • 2 Tablespoons melted butter
  • 2 Tablespoons sugar equivalent in artificial sweetener

  • Directions:
    Heat oven to 375 F.
    Crust:  Combine the last 3 ingredients for the crust, and press into the bottom of a springform pan.
    Bake for 8 to 10 minutes, until brown.

    Heat oven to 400 F.
    Cheesecake: Beat cream cheese in a mixing bowl until fluffy. Add remaining ingredients, be sure ingredients are well incorporated. Once all ingredients are combined, pour the mixture into the pan, on top of the crust. Put cheesecake in the oven and turn down to 200 F.  Bake 60 - 90 minutes until the cake is firm but center is slightly soft.
    Chill in refrigerator before serving.

    Keto and Low-Carb Food Finds

     As with any diet, eating the same things gets old and you want to mix it up or indulge in something new.  I have recently come across a few new products that are keto-friendly that I have either tried or am looking to try soon.



    Buff Bake -- Decadent flavored almond butter.  They even have BIRTHDAY CAKE!  I love me some almond butter (admittedly straight off a spoon) so I am getting some of this stat!



    Halo Top Ice Cream -- Low carb, sugar free, low calorie ice cream.  This stuff is amazing.  It doesn't matter if you are low-carb or not, the fact that the whole container is around 250 calories is crazy!  The Dillon's near my house carries it but unfortunately has been sold out the last couple of trips I have made.  Again, Birthday Cake Flavor is awesome.

    Quest Pumpkin Pie Bars -- Pumpkin pie flavored protein bars.  These came out last fall but you can still find them online.  The bar is unique from other Quest bars because it has a nice coating of pumpkin glaze on the outside.  I really enjoyed this flavor and will be ordering more.

    I have recently submitted to be a reviewer for Quest Labs so I can review and give feedback on new Quest products coming soon.  I have heard of some new cereal like bars and peanut butter style cups coming soon!

    Sweet & Spicy Tofu Stir fry -- Keto Friendly

    I am always interested to find new things to eat and realized I hadn't done much tofu since I started keto.  I do the noodles on occasion but not the firm tofu, so I pulled together this little stir fry inspired by niece who likes to make stir fry tofu.


    Sweet & Spicy Tofu Stir Fry
    1 package of extra firm tofu  chopped into bite size pieces
    2 Tbs. Soy Sauce
    1 Tbs. Sukrin Gold Brown Sugar Alternative (love this stuff!)
    Cabbage sliced
    Mushrooms sliced
    Green Pepper sliced
    Onion sliced
    2 Tbs. Water
    1 Tbs. Sriracha
    1 Tbs. Coconut oil

    Mix soy sauce, sukrin, Sriracha, and water together in a bowl large enough to marinate tofu.  Marinate for 5 minutes.  Heat coconut oil in the skillet.  Add tofu and vegetables (as many as you want) and cook until desired.  I like to char my food quite a bit so I let it cook until it was well done. My husband wasn't crazy about it but the daughters seemed to like it.  Enjoy!

    Dill Pickle Cashews

    Just a quick share on a new snack that I have discovered and LOVE.  I mean really LOVE. 

    Emerald Dill Pickle Cashews are awesome.  I like that they come in the 100 calorie packs too so I don't overeat.  If you love pickle flavor, you will definitely want to pick these up. I find mine at Target in the grocery section.  They are a little higher in carbs compared to other nuts but still works for keto.  Excuse while I go find all the other things in life that are dill pickle flavored.

    Egg Salad

    I love good ole plain egg salad.  It is convenient to make and keeps me full for hours.  Friday evening I was struggling to find something that sounded good so I went back to egg salad and whipped up a quick batch. 



    Nothing Fancy Egg Salad

    6 Hard Boiled Eggs roughly chopped
    2 Tbs. Real Mayo
    1 Tbs. Mustard
    Salt & Pepper to taste

    Another Keto Dinner 3/18/2016

    Here is another dinner I pulled together this last week -

    Cheesy Scallop Pasta with Mushrooms and Peas and Goat Cheese Stuffed Peppers

     
    The Cheesy Scallops, Mushrooms, and Peas was a frozen bag thing that I found at Trader Joes a couple of weeks ago while in Kansas City.  I heated it up on the stove and then added a bag of Miracle noodles.  If you've never heard of miracle noodles (or shirataki noodles), they are essentially tofu noodles, low carb.  You can usually find these in the health refrigerated section of the grocery store near the soy milks and fake cheese. They don't have a lot of flavor but definitely simulate the feeling of eating pasta when you are craving it.
